Antonio Aguilar and Roberto Gerena created the Mexican culinary concept ‘Nacho Libre’ in early 2017. In September 2017 and their idea materialized, a few days before the scourge of Hurricane Maria. Today Nacho Libre Mexicana Cantina in Hato Rey is a popular spot for folk craving Mexican dishes and they have big plans for 2019.
“For us it has been a very arduous process, but we have enjoyed at every stage,” said Roberto Gerena, one of the creators of Nacho Libre. “We started just days before Mary and although we thought it would be difficult to recover all the work and money invested, we were blessed that the concept was well received since day one.”
With the success of Nacho Libre Mexicana Cantina, Antonio and Roberto are planning to expand during 2019. This month they have already opened two new locations: El Nachito Food Truck in Guaynabo and a Pop-Up kitchen at Lot 23 in Santurce. They also hope to have 2 more locations in Bayamon and Dorado by the end of 2019.
“We believe that much of the success goes beyond the good atmosphere and it has to do with the quality of our ingredients. All ingredients are fresh, with some local suppliers, “said Gerena.
Along with the new locations Nacho Libre Mexicana Cantina is planning on selling their famous Piques and Margaritas so customers can enjoy them at home. There are also plans to expand the menu and offer Party Packs, for Taco Parties at home or at the office.
Nacho Libre operates seven days a week and offers a wide variety of choices: including the opportunity to create yourr own dishes with the “open taco” or “make your own” where you can build your burrito, quesadilla or Burrito “bowl” with all fresh ingredients. Customers can also try their famous margaritas created fresh every time.
With a great combination of Mexican cuisine and a very attractive social environment, Nacho Libre is the meeting place for young adults and lovers of Mexican food on the island.
